The Bikini Cocktail

Serves 10 servings

For the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Premix (produces 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Put all the ingredients inside a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Then, turn off the burner and leave to cool fully. Pour into a sealable bottle, cap it and refrigerate it in the fridge, it will last for about a month.

To make Batch Mix: Mix the specified liquids into a big jug, let it rest for one hour, then filter it preferably using a fine cloth, to ensure it's completely strained.

To serve: Measure 85ml of your batch mix to a cocktail shaker packed with ice, and stir gently for about 60 seconds until cold. Strain into a chilled martini glass or similar, decorate with a few cranberries and complete it using a brief mist of mandarin oil above the glass.
